Snowy Owl To Unveil New ‘Night Owl’ Plan; Grand Opening Tentatively Set For New Location

BREWSTER – This year, Snowy Owl is growing into a larger space, expanding its menu, and extending its hours, part of a new concept meant to encourage customers to settle in rather than rush out.
While the changes signal a new chapter for the iconic coffee house, co-owner Shayna Ferullo said the familiar coffee blends and easygoing atmosphere that have built a loyal following won’t be lost.
“There’s not going to be a huge monumental change in terms of our offerings,” she said. “Except that we’ll have more of them and we will be staying open later.”
On Dec. 15, Ferullo and her husband and co-owner Manuel Ainzuain went before the select board to obtain a wine and malt beverages license for the new location. This is in tandem with an extended entertainment license and an extended common victualler license with hours of operation from 5 p.m. to 10 p.m.
The new concept, named “Night Owl,” will include wine, beer, coffee drinks, snacks and acoustic music. Ferullo said the idea offers visitors a place to grab a drink before their reservations at establishments around Brewster.
“There are some great restaurants in Brewster, so we don’t want to compete with them,” she said. “But we want [people] to be like ‘hey, let’s stop and get a drink.’”
The new space has a “little kitchen area” where they will be able to prepare snack plates and experiment with different creative drink ideas, including mocktails. Ferullo also said they will be getting a frozen drink machine to experiment with.
While the logistics are not fully fleshed out, she said, they will likely open their doors for five nights during the summer and three nights in the off-season, but it is dependent on the demand.
Local artists and musicians will be on the microphone as well.
The new location, in the former TD bank building at the corner of Underpass Road and Route 6A (just about a mile from the current location), is currently undergoing renovations. Ferullo said their ongoing month-to-month lease with their current landlord will be up on Feb. 10, so their last weekend of service will be Feb. 7 and 8. While they will ultimately have to miss opening for February school vacation, Ferullo is optimistic the new location will be open by the end of the month or early March.
Once they are officially moved into the new space, they have to obtain a certificate of occupancy from the town before opening the doors to the public.
A grand opening is planned and will be announced on Snowy Owl’s social media platforms.
