Minding Your Business- Snowy Owl Coffee Roasters

Snowy Owl Coffee Roasters has become an iconic local Cape Cod brand over its 10 years in business with locations in Brewster, Chatham and Sandwich. The Brewster cafe and roastery was built during the summer of 2015 and is a staple in the Lower Cape area, attracting visitors and locals alike on a daily basis. 
The Chatham Espresso Bar opened in the summer of 2018 and is a seasonal location that serves visitors and residents from mid-spring through the holidays. The lovely, open-air courtyard is perfect for sitting and enjoying a drink and treat. The newest cafe, located at 161 Route 6A in Sandwich, is now the headquarters for the Snowy Owl coffee roasting operation and home to their delicious bakery. 
Snowy Owl offers high-grade, freshly roasted and meticulously prepared coffees. They procure specialty coffee beans from importers, small-lot growers, and cooperatives that focus on environmental sustainability, economic development, and educational enhancement programs. Their goal is to provide transparency and education to their customers. 
Husband and wife owners Shayna Ferullo and Manuel Ainzuain had a dream of opening their own business upon moving to the Cape from San Francisco over a decade ago. The “third wave” specialty coffee and farm-to-table movements were big in California at the time and inspired them to take a leap of faith in Brewster.
“We saw the opportunity at the Brewster location and seized it,” Ferullo  said. “We had always dreamt of starting our own little coffee roasting business here. And here we are 10 years later!"
Snowy Owl makes the act of drinking coffee an art. From signature blends, cold brews, espressos and everything in between, there is something for everyone at their cafes. They come out with four limited seasonal specials each year and make all of their syrups in house. 
Snowy Owl partners with Boston companies like Taza for their mocha and chocolate offerings for specialty drinks and MEM for their tea offerings. But it is their signature blends that separate them from almost any other coffee maker on Cape Cod.
“We have three signature blends that we opened with 10 years ago that are our most popular: the Captain Crosby Blend, Jaws Blend and Brewster Blend,” Ferullo said. “Those are available year-round and appeal to three different types of coffee drinkers. The Brewster Blend tends lighter with fruity, citrusy notes. The Jaws Blend tends to be a little more forward balanced and chocolaty, while the Captain Crosby is robust and earthy. We also came out with an even darker coffee called the Night Owl.”
Snowy Owl will be on the move in early 2026 with a much anticipated relocation of their Brewster location, just down the road on Route 6A where the old TD Bank used to be at 7 Underpass Rd. 
“It was really important for us to stay in Brewster,” Ferullo said. “Our time in our existing Brewster location was winding down because the property was transitioning and we knew we really needed long-term stability. This project is big and expensive but it is really all so we can stay in Brewster. We both live here and are raising our kids in the school systems. It is a huge community that we are proud to be a part of.”
